SWEET APPLE & ALMONDS WITH WAFFLES (quick dessert)

40g (2T) butter or margarine
20g (1/4c) flaked almonds
4 large Royal Gala or medium Golden Delicious apples: peeled, cored & cut into 1-2cm pieces
2T golden syrup
pinch ground nutmeg
8 English-style waffles
125ml (1/2c) thickened cream

1.  Heat 20g butter in a medium non-stick frying pan over medium heat. Add flaked almonds & cook, stirring constantly for 2-3 mins or until golden. Drain on paper towel. Wipe out fry pan.

2.  Heat remaining 20g butter in same pan over med heat. Add apples and cook, stirring occasionally, for 8-10 mins or until tender. Stir in almonds, golden syrup & nutmeg and cook for 1 min or until combined (see MW tip). Set aside and keep warm.

3.  Toast waffles until golden. Place waffles on serving plates, top with apples & almonds and serve with cream.

MW TIP:  Place almonds into oven bag & twist opening to close. Plac onto turntable & cook on High/850 watts/100%, shaking bag carefully every minute, until lightly toasted. Place 20g butter and apples into a large mw-safe bowl  Cook, uncovered, for 4-6 mins on Med-High/650w/70%, stirring occasionally or until tender. Stir in almonds, golden syrup & nutmeg & heat a further 30-40 sec or until combined.
