CHOCOLATE CREAM PUFFS
Makes about 30
1 cup hot water
125g butter
1 cup plain flour, sifted
4 large eggs
1 Tab cocoa, sifted
CREAM:
100g cooking chocolate
2 eggs, separated
450ml whipped cream
Lightly grease a baking tray.
Place water & butter in medium saucepan, bring to rapid boil.
Quickly add sifted flour, stirring until mixture leaves the sides of the pan. Remove from heat.
Add eggs one at a time, beating well after each addition. Beat in sifted cocoa. Place heaped teaspoonfuls of mixture on lightly greased tray; allow room for spreading.
Bake in hot oven 200 degrees C for 10 mins. Reduce to moderate 180 degrees C, baking for a further 40-45 mins.
CHOCOLATE CREAM:
Melt chocolate in bowl over hot water; cool slightly. Add egg yolks; beat until smooth.
Whip egg whites until stiff. Fold cream & egg whites into chocolate mixture.
To serve: Fill each puff with choc cream. Drizzle over melted chocolate if desired.
