String Beans with Almonds & Tahini

1 - 340g bag green beans
⅓ cup sliced almonds
Juice of 1 lemon
1 garlic clove, grated
¼ cup olive oil
½ tsp salt
black pepper
Tahini, to drizzle
1.  Boil a large pot of water over high heat. Trim the beans to remove the point ends and add to the boiling water. Cook
for 1½ minutes, then drain and transfer directly to a plate.
 
2.  At the same time, heat a small frying pan over medium heat and add the almonds. Cook for 3-5 minutes, tossing occasionally, until golden and nutty.
3.  Whisk together the lemon juice, garlic, olive oil, salt, and a few turns of black pepper in a small bowl. 
 Pour the dressing over the green beans and mix together.
4.  Top with almonds and drizzle with tahini just before serving.

Low Carb Hot Coconut Breakfast Porridge

This unique Keto breakfast recipe puts a twist on porridge. This delicious, quick & easy hot breakfast will really fill you up. Add a pinch of real salt, cinnamon, and a dash of vanilla extract for more flavour.

2 Tab each of Flax Seeds, Coconut or Almond Flour with oat fibre
¾ cup water
⅛ tsp salt – could be too much!
1 large egg (for extra fat and protein – you can omit it)
2 tsp butter
1 Tab coconut or warm almond milk
⅛ cup Blueberries

Step 1
Add ground flax seeds, coconut flour, water and salt to a small saucepan. Heat the mixture on medium-high heat over the stove until the mixture is slightly thickened. Stir continually while the mixture is heating.
Step 2
Beat an egg together in a small dish to the side. Take your flax seed mixture off the heat, add only half of the egg, and whisk it in rapidly. Then, add the rest of the egg and rapidly whisk until the egg cooks through and thickens the porridge.
Step 3
Finally, stir the butter into the porridge. You can add other toppings to the porridge. Here, a drizzle of coconut milk and a sprinkle of blueberries were added.

Porridge toppings
This recipe is topped with coconut milk and blueberries. For a more savory topping, try drizzling cashew cream or sprinkling sliced almonds over the top. If you really like coconut, unsweetened coconut flakes also make a scrumptious porridge topping.
