Chocolate Coconut Rough Slice

This is so easy & utterly delicious. It has a simple chocolate biscuit base & on top, coconut frosting that melds with the base to form a delicious chocolatey coconut slice! No mixer or special equipment necessary-just a bowl and a spoon will do!  Serves: 14

Ingredients:
BASE
1 cup/150g/5ozs. plain flour
1/2 cup/45g/1.6ozs. desiccated coconut
2 tsp BP
1/4 cup/55g/1.9ozs. caster sugar
2T cocoa powder
pinch salt
130g/4.6ozs. butter, melted
1 tsp vanilla extract
TOPPING
2 cups/260g/9ozs. icing sugar, sifted
1.75 cups/150g/5ozs desiccated coconut
2T cocoa powder
100g/3.5ozs. butter, melted
100g/3.5ozs. sweetened condensed milk
1-2 Tabs boiling water
1 tsp vanilla extract

20x20cms (8×8″) square tin, parchment paper, angled spatula

Step 1 – Preheat oven to 165C & line tin with parchment on the base and sides.
Whisk the flour, coconut, BP, sugar, cocoa & salt until well combined.
Add in the melted butter & vanilla; stir to combine. Press into prepared tin & bake 20 mins til set.
Step 2 – While base is baking, mix the topping ingredients & spread over the cooked base; smooth with an angled spatula. Allow to set firm either at room temp or in the fridge.
Cut into slices. This will keep in an airtight container for 1-2 weeks (if it isn’t eaten before then!).
