CARROT & PECAN SALAD (healthy)

serves 6

2 medium carrots (250g) – scrubbed and grated
1c chopped celery
1/2c sultanas
1/2c pecans, roughly chopped
2T mayo or natural yoghurt
1t lemon juice
salt & pepper (opt)

Combine carrots with celery, sultanas and pecans.
Mix yoghurt with lemon juice & seasoning. Stir through salad.
